Ingredients

  • 3 cups ripe tomatoes
  • 2 cups red grapes
  • 1 medium cucumber
  • 1/4 cup red onion
  • 1/2 cup fresh basil leaves
  • 1/4 cup fresh mint leaves
  • 4 oz feta cheese
  • 1/3 cup roasted sunflower seeds
  • 3 tbsp extra-virgin olive oil
  • 1 1/2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 tsp lemon zest

Instructions

  1. 1Rinse the tomatoes and grapes under cool water and pat completely dry with a clean towel so the salad stays crisp.
  2. 2Core the tomatoes and chop them into even bite-size pieces; transfer to a large mixing bowl.
  3. 3Halve the grapes lengthwise so they release a little juice and nestle easily with the tomatoes.
  4. 4Peel the cucumber if the skin is thick, then dice it into small cubes similar in size to the tomato pieces and add to the bowl.
  5. 5Finely mince the red onion and scatter it over the chopped produce so every bite gets a little sharpness.
  6. 6Stack the basil and mint leaves, roll them tightly, and slice into thin ribbons; add the herbs to the bowl.
  7. 7In a small jar or bowl whisk the olive oil, red wine vinegar, Dijon mustard, honey, salt, pepper, and lemon zest until the dressing looks glossy and emulsified.
  8. 8Pour the dressing over the chopped vegetables and fruit and toss gently with two spoons until everything is lightly coated.
  9. 9Crumble the feta over the top in uneven chunks so some pieces stay creamy and others melt slightly into the juices.
  10. 10Sprinkle the roasted sunflower seeds across the salad for crunch, give one final gentle toss, and taste for salt.
  11. 11Let the salad sit five minutes at room temperature so the flavors marry, then transfer to a wide platter for easy sharing.
  12. 12Serve immediately with extra seeds on the side so guests can add more crunch at the table.
