Ingredients

  • 3 cups cubed sugar pie pumpkin
  • 1 medium Honeycrisp apple
  • 1 small yellow onion
  • 2 cloves garlic
  • 3 cups vegetable broth
  • 3/4 cup coconut milk
  • 6 fresh sage leaves
  • 2 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp toasted pumpkin seeds
  • 1/4 cup crème fraîche
  • 2 tbsp snipped chives

Instructions

  1. 1Peel and cube the pumpkin into even 1-inch pieces. Peel, core, and roughly chop the apple. Dice the onion and smash the garlic.
  2. 2Heat olive oil in a large pot over medium heat. Add onion and cook 4 to 5 minutes until translucent and sweet-smelling.
  3. 3Stir in garlic and sage leaves; cook 30 seconds until aromatic but not browned.
  4. 4Add pumpkin and apple cubes. Pour in the broth, bring to a gentle boil, then reduce to a simmer. Cover and cook 18 to 20 minutes until pumpkin is completely soft when pressed with a spoon.
  5. 5Remove the sage leaves. Carefully transfer the mixture in batches to a blender. Blend on high until ultra-smooth and silky, about 1 minute per batch.
  6. 6Return the purée to the pot. Stir in coconut milk, maple syrup, vinegar, salt, and pepper. Taste and adjust seasoning so the apple brightness comes through.
  7. 7Cool the soup to room temperature, then refrigerate at least 2 hours or overnight until thoroughly chilled. The flavors deepen as it rests.
  8. 8Before serving, whisk the cold soup; if it has thickened, loosen with a splash of cold broth or water until it pours smoothly.
  9. 9Pour into small shooter glasses or espresso cups for a shareable lunch starter or light midday spread.
  10. 10Top each shooter with a tiny swirl of crème fraîche, a few toasted pumpkin seeds, and snipped chives.
  11. 11Keep extra soup chilled in a pitcher so guests can refill; perfect make-ahead centerpiece for weekend gatherings.
