  • 1/4 cup chopped fresh basil
  • 12 slices thick-cut bacon
  • 2 large ripe tomatoes
  • 8 butter lettuce leaves
  • 1/3 cup mayonnaise
  • 1 tsp lemon juice
  • 1/2 tsp hot sauce
  • as needed cooking spray

Instructions

  1. 1Preheat your waffle iron to medium-high and set the oven to 200°F to keep finished waffles warm. Whisk the flour, cornmeal, baking powder, salt, and black pepper in a large bowl until evenly combined.
  2. 2In a separate bowl, beat the buttermilk, eggs, and melted butter until smooth. Pour the wet mixture into the dry ingredients and stir just until no dry streaks remain; fold in the chopped basil gently so the batter stays light.
  3. 3Let the batter rest five minutes while you cook the bacon. Arrange the bacon in a single layer in a large skillet over medium heat and cook until deeply crisp and browned, turning once, about 8 to 10 minutes total.
  4. 4Transfer bacon to a paper-towel-lined plate. Slice the tomatoes into thick rounds and season lightly with salt and pepper so their juices start to bloom.
  5. 5Stir mayonnaise with lemon juice and hot sauce for a quick spicy aioli. Lightly mist the hot waffle iron with cooking spray.
  6. 6Scoop batter onto the iron, close, and cook until the waffles are deep golden and crisp at the edges with steam no longer billowing, typically 4 to 5 minutes depending on your iron. Keep finished waffles on a rack in the warm oven.
