Beet Apple Grain Bowl
Farro, an ancient Mediterranean grain, anchors this lunch bowl where earthy roasted beets meet crisp apples. Chickpeas, feta, and a maple-Dijon drizzle round out the sweet-savory balance with fresh dill and walnuts.

Ingredients
- 1 cup dry farro
- 1 lb beets
- 2 crisp apples
- 4 cups baby arugula
- 1 1/2 cups cooked chickpeas
- 4 oz feta cheese
- 1/3 cup walnuts
- 1/4 cup extra-virgin olive oil
- 2 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp maple syrup
- 3 tbsp fresh dill
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- 1Rinse the farro under cold water. Cook it in a pot of salted boiling water according to package timing, usually 25 to 30 minutes, until tender with a pleasant chew. Drain well and spread on a plate to cool slightly.
- 2While the farro cooks, scrub the beets and wrap them loosely in foil. Roast at 400°F for 45 to 55 minutes until a knife slides in easily. Let cool, then rub off the skins with a paper towel and cut into wedges.
- 3Core the apples and slice them into thin half-moons. Keep the peels on for color. Chop the dill and roughly break the walnuts.
- 4In a small bowl whisk together the olive oil, apple cider vinegar, Dijon, maple syrup, half the salt, and pepper until smooth and emulsified.
- 5In a large bowl combine the warm farro, chickpeas, arugula, and most of the dressing. Toss gently so the grains soak up flavor and the greens wilt just a little.
- 6Divide the dressed farro mixture among four bowls. Arrange the beet wedges and apple slices on top in neat sections.
- 7Crumble the feta over each bowl and scatter the walnuts and remaining dill. Drizzle any leftover dressing across the top.
- 8Season with the remaining salt and a final grind of pepper. Serve warm or at room temperature.
- 9For packed lunches, layer farro and chickpeas first, then beets and apples, keeping arugula, feta, and dressing separate until ready to eat so everything stays fresh.
