  • 2 medium zucchini, thinly sliced into rounds
  • 2 yellow squash, thinly sliced into rounds

  • 1 large red bell pepper, thinly sliced
  • 1 large yellow bell pepper, thinly sliced
  • 1½ cups fresh corn kernels
  • 1 yellow onion, thinly sliced
  • 4 garlic cloves, minced
  • ⅓ cup olive oil
  • 2 tsp fresh thyme leaves
  • ½ cup fresh basil, torn
  • ¾ cup grated Parmesan or Gruyère
  • 1½ tsp kosher salt
  • ¾ tsp black pepper
  • ½ cup panko or fresh breadcrumbs

Instructions

  1. 1Preheat the oven to 400°F and brush a 9-by-13-inch or similar shallow baking dish generously with olive oil so the bottom layer of vegetables caramelizes instead of sticking.
  2. 2In a large bowl, toss the sliced onion, minced garlic, corn kernels, and a spoonful of olive oil with salt; spread this mixture evenly across the bottom of the dish to form a sweet, juicy base.
  3. 3Arrange the zucchini, yellow squash, tomato, and bell pepper slices upright in tight, alternating rows over the onion-corn bed, packing them snugly so the tian holds its shape when scooped.
  4. 4Drizzle the remaining olive oil evenly over the upright vegetables, then sprinkle with salt, black pepper, and fresh thyme so every slice is seasoned.
  5. 5Cover the dish loosely with foil and bake for 30 minutes to soften the vegetables and let their juices mingle without drying the top.
  6. 6Remove the foil, scatter the grated cheese and breadcrumbs over the surface, and return the tian to the oven uncovered.
  7. 7Bake another 25 to 30 minutes until the edges are deeply caramelized, the tomatoes look jammy, and the cheese-breadcrumb topping is golden and crisp.
