Ingredients
- 1.5 lb duck legs confit or bone-in duck thighs
- 12 oz smoked sausage
- 1/2 cup vegetable oil or duck fat
- 1/2 cup all-purpose flour
- 1 large yellow onion
- 1 green bell pepper
- 3 celery stalks
- 5 garlic cloves
- 6 cups chicken or duck stock
- 2 bay leaves
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 1/2 tsp cayenne pepper
- 1.5 tsp kosher salt
- 1 tsp black pepper
- 5 green onions
- 1/4 cup fresh parsley
- 4 cups cooked white rice
- 1 tbsp filé powder
Instructions
- 1If using raw duck thighs, pat dry and season well. Slice the smoked sausage into coins. Dice the onion, bell pepper, and celery; mince garlic and chop herbs.
- 2In a heavy Dutch oven over medium heat, render and brown the duck pieces skin-side down until deeply golden and some fat is released, 6 to 8 minutes per side. Remove duck to a plate.
- 3Brown the sausage slices in the same pot until edges crisp, then transfer to the plate with the duck.
- 4Add oil or reserved duck fat to reach half a cup total fat. Whisk in flour and cook the roux, stirring nonstop, until it turns a dark chocolate brown, 25 to 35 minutes for maximum smoky depth.
- 5Add the holy trinity and cook 5 minutes until softened and fragrant. Stir in garlic for 30 seconds.
- 6Gradually whisk in the stock until the roux is fully incorporated and the liquid is smooth. Return duck and sausage to the pot with bay leaves, smoked paprika, thyme, cayenne, salt, and pepper.
- 7Bring to a boil, then lower to a gentle simmer. Cover partially and cook 1 hour to 1 hour 15 minutes until the duck meat is falling from the bone.
- 8Remove duck pieces, shred the meat, discard bones and excess skin, and return shredded duck to the gumbo. Simmer 5 more minutes to marry flavors.
- 9Discard bay leaves. Stir in most of the green onions and parsley. Ladle over rice, dust lightly with filé, and finish with remaining herbs.
