
Smoky Beer-Can Chicken

Ingredients
- 4 lb whole chicken
- 1.5 tbsp kosher salt
- 1 tbsp brown sugar
- 2 tsp smoked paprika
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 (12 oz) beer can or tall grill-safe can
- 1 tbsp neutral oil
- 1 cup wood chips for smoking optional
Instructions
- 1Remove giblets from the chicken, pat the bird completely dry inside and out, and tuck the wing tips behind the back. Rub the skin lightly with oil so the spice rub adheres.
- 2Mix the salt, brown sugar, smoked paprika, chili powder, garlic powder, onion powder, oregano, black pepper, and cayenne. Season the cavity generously, then coat the entire exterior with the remaining rub, massaging it into every surface.
- 3Refrigerate the rubbed chicken uncovered on a rack for 1–4 hours if time allows; this dries the skin for better crispness and lets you prep ahead of the cookout.
- 4Open the beer and pour out (or drink) half so the can is half full. If using wood chips, soak them 30 minutes, then drain and set up for smoke on your grill per manufacturer guidance.
- 5Preheat the grill for indirect medium heat, aiming for a steady 350–375°F with a cool zone in the center. Place a drip pan under where the chicken will sit if your setup allows.
- 6Lower the chicken cavity over the half-full beer can so the bird sits upright like a tripod, using the legs for balance. Carefully transfer the upright chicken to the grill’s indirect zone, close the lid, and cook without peeking too often.
- 7Grill until the thickest part of the thigh reads 165–170°F and juices run clear, typically 75–90 minutes depending on bird size and grill heat. Skin should be deep golden and lightly crisp with a smoky aroma.
- 8Using tongs and a sturdy spatula, carefully lift the chicken off the can—contents will be hot—and rest on a board 10–15 minutes. Carve into breasts, thighs, drumsticks, and wings and arrange on a large platter for easy grabbing.
