  • 1 lb mild Italian chicken sausage links
  • 2 large firm apples (Honeycrisp or Fuji), cored and sliced into wedges
  • 1 lb late-season tomatoes, halved
  • 1 medium red onion, cut into wedges
  • 6 fresh thyme sprigs
  • 1 tbsp fresh rosemary, chopped
  • 3 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 garlic cloves, smashed
  • 2 cups baby arugula
  • 1 tbsp balsamic vinegar

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easy cleanup.
  2. 2Pat the sausage links dry and prick them lightly with a fork so they release juices without bursting.
  3. 3Toss the apple wedges, tomato halves, onion wedges, smashed garlic, thyme sprigs, and chopped rosemary directly on the sheet pan.
  4. 4Drizzle everything with olive oil, then season evenly with salt and black pepper; spread into a single layer so the produce can caramelize.
  5. 5Nestle the sausage links among the fruit and vegetables, turning them once so they pick up a light oil coating.
  6. 6Roast for 18 minutes, then carefully flip the sausages and stir the apples and tomatoes so cut sides face down.
  7. 7Continue roasting another 10 to 12 minutes until the sausages are browned and cooked through, the apples are tender-crisp and golden at the edges, and the tomatoes collapse and blister.
  8. 8Remove the pan from the oven and immediately drizzle the balsamic vinegar over the hot tomatoes and apples so it sizzles and reduces slightly.
  9. 9Scatter the baby arugula over the pan; the residual heat will just wilt the greens without making them soggy.
  10. 10Let the sheet pan rest 3 minutes so juices settle, then portion sausage, apples, tomatoes, and greens onto plates, spooning pan drippings over the top.
