  • 1.5 lb butternut squash, peeled and cubed
  • 2 firm apples, cored and cubed
  • 2 cups cooked shredded rotisserie chicken
  • 4 cups baby kale or spinach
  • 1/3 cup raw pumpkin seeds
  • 3 tbsp olive oil
  • 1 tbsp maple syrup
  • 2 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tbsp fresh sage leaves, chopped
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/4 cup crumbled feta (optional)

Instructions

  1. 1Preheat the oven to 400°F and line two sheet pans with parchment so the squash and apples roast without steaming.
  2. 2Toss the cubed squash with half the olive oil, half the salt, pepper, and chopped sage until every cube is lightly coated.
  3. 3Spread the squash in a single layer on one pan and roast 20 minutes until the edges begin to caramelize and a fork slides in easily.
  4. 4Meanwhile toss the apple cubes with a teaspoon of the remaining oil so they do not dry out; add them to the second pan.
  5. 5Roast the apples 12 to 15 minutes until tender and lightly golden but still holding shape; pull them before they turn mushy.
  6. 6While produce roasts, whisk the remaining olive oil with maple syrup, apple cider vinegar, Dijon, and salt into a bright dressing.
  7. 7Warm the shredded chicken briefly in a skillet over medium heat or in the microwave so it is not cold against the hot vegetables.
  8. 8Divide the baby kale among four bowls; the residual heat from the roasted squash will gently wilt the greens.
  9. 9Top each bowl with roasted squash, roasted apples, warm chicken, and a sprinkle of pumpkin seeds for crunch.
