Roasted Root & Mushroom Medley

Ingredients

  • 1 lb mixed cremini and shiitake mushrooms
  • 2 cups cubed fresh pumpkin or butternut
  • 3 medium carrots
  • 2 medium parsnips
  • 1 large red onion
  • 1 firm apple
  • 5 smashed garlic cloves
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 1/4 tsp red pepper flakes
  • 4 cups baby kale or arugula
  • 1/4 cup toasted pumpkin seeds
  • optional 1/3 cup crumbled feta or goat cheese

Instructions

  1. 1Preheat oven to 425°F and position a rack in the center. Line two large rimmed baking sheets with parchment for even roasting.
  2. 2Cut the pumpkin, carrots, and parsnips into roughly 3/4-inch chunks so they cook at the same rate. Halve or quarter the mushrooms depending on size; keep them chunky.
  3. 3In a large bowl whisk olive oil, balsamic, Dijon, honey, salt, pepper, and red pepper flakes into a loose dressing.
  4. 4Toss the root vegetables, red onion wedges, smashed garlic, and herb sprigs with most of the dressing until glossy. Spread in a single layer on one sheet.
  5. 5Toss the mushrooms and diced apple with the remaining dressing and spread on the second sheet so they roast without steaming.
  6. 6Roast both sheets for 20 minutes. Rotate pans and stir once, then continue roasting until roots are deeply caramelized at the edges and mushrooms are browned and meaty, another 12–18 minutes.
  7. 7Remove herb stems. Taste a carrot piece; it should be tender with concentrated sweetness.
  8. 8In a wide serving bowl or platter, scatter the baby kale or arugula. Immediately tip the hot roasted vegetables and mushrooms over the greens so they wilt slightly from the residual heat.
  9. 9Toss gently once or twice. Scatter toasted pumpkin seeds and optional cheese over the top.
  10. 10Serve warm as a hearty main with crusty bread or leftover grains if you want extra bulk. Leftovers reheat beautifully the next day.
