Ingredients

  • 1 lb sweet potatoes
  • 3 medium carrots
  • 2 medium parsnips
  • 1 large red onion
  • 3 tbsp olive oil
  • 8 fresh sage leaves
  • 1 tsp chopped fresh rosemary
  • 1¼ tsp kosher salt
  • ¾ tsp black pepper
  • 2 cups fresh cranberries
  • ⅓ cup orange juice
  • 2 tbsp honey
  • 1 tsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tbsp butter
  • 2 tbsp chopped fresh chives

Instructions

  1. 1Preheat the oven to 425°F and position a rack in the center; line a large sheet pan with parchment.
  2. 2Peel the sweet potatoes, carrots, and parsnips as needed, then cut all roots and the red onion into similar ¾-inch chunks so they roast evenly.
  3. 3Toss the cut vegetables on the sheet pan with olive oil, torn sage, chopped rosemary, salt, and pepper until every surface is lightly coated.
  4. 4Spread into a single crowded-but-not-overlapping layer and roast 30 to 35 minutes, stirring once halfway, until the edges are caramelized and a knife slides through the sweet potato easily.
  5. 5Meanwhile, combine cranberries, orange juice, honey, Dijon, and vinegar in a small saucepan over medium heat.
  6. 6Bring to a simmer and cook 10 to 12 minutes, stirring and gently pressing some berries against the side of the pan, until the sauce thickens and looks glossy with both whole and burst fruit.
  7. 7Remove the sauce from heat, swirl in the butter until melted and silky, then taste and balance with salt if needed.
  8. 8When the roots are done, transfer them to a warm serving bowl or leave them on the pan for family-style serving.
  9. 9Spoon the warm fresh cranberry sauce over the roasted medley, scatter chopped chives on top, and serve right away so the hot roots meet the bright sauce.
