Ingredients
- 2.5 cups cooked brown lentils
- 1.5 lb beets
- 3 medium carrots
- 1 large red onion
- 6 oz feta cheese
- 2 tbsp fresh thyme leaves
- 1 tbsp chopped fresh sage
- 1/4 cup olive oil
- 4 garlic cloves
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 1/2 cup vegetable broth
- 3/4 cup panko breadcrumbs
- 1.25 tsp kosher salt
- 3/4 tsp black pepper
- 1/4 cup dried cranberries
- 3 cups baby spinach
Instructions
- 1Preheat the oven to 400°F and lightly oil a 9-by-13-inch baking dish.
- 2Wrap the beets in foil and roast until a knife slides in easily, about 45 to 55 minutes depending on size; cool slightly, then peel and cut into 3/4-inch cubes.
- 3While the beets roast, peel and slice the carrots into coins and cut the red onion into thin wedges.
- 4Toss the carrots and onion with a little olive oil, salt, pepper, and half the thyme on a separate sheet pan; roast 20 minutes until edges brown.
- 5In a large bowl combine the cooked lentils, roasted beet cubes, roasted carrots and onion, torn spinach, remaining thyme, chopped sage, minced garlic, lemon zest, lemon juice, and most of the olive oil.
- 6Fold in half the crumbled feta and the dried cranberries so pockets of salty and tart remain.
- 7Spread the mixture evenly in the prepared baking dish and drizzle the vegetable broth over the top to keep everything moist while it bakes.
- 8Mix panko with the remaining olive oil and salt, then scatter over the surface along with the rest of the feta.
- 9Bake 25 to 30 minutes until the top is golden and the edges bubble gently.
- 10Rest 10 minutes so the bake sets for clean slices, then serve warm or at room temperature for potluck grazing.
