Ingredients
- 1.5 lb boneless skinless chicken thighs
- 1/2 cup creamy peanut butter
- 1/2 cup full-fat coconut milk
- 3 tbsp soy sauce
- 2 tbsp fresh lime juice
- 2 tbsp brown sugar
- 3 garlic cloves
- 1 tbsp minced fresh ginger
- 1 tbsp red curry paste
- 1 tsp fish sauce
- 8 wooden skewers
- 1/4 cup chopped roasted peanuts
- 1/4 cup fresh cilantro
- 1 lime lime wedges
- 1 tbsp neutral oil
Instructions
- 1Soak the wooden skewers in water for at least 20 minutes so they do not burn on the grill or under the broiler.
- 2Cut the chicken thighs into even 1-inch pieces and pat them dry with paper towels so the marinade clings well.
- 3In a medium bowl whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, minced garlic, minced ginger, red curry paste, and fish sauce until smooth and pourable.
- 4Reserve one-third of the peanut sauce in a separate bowl for basting and serving; pour the rest over the chicken pieces and toss to coat thoroughly.
- 5Cover and marinate the chicken in the refrigerator for 20 to 30 minutes while you heat the grill or broiler to medium-high, about 400°F.
- 6Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between pieces for even cooking.
- 7Brush the grill grates or a broiler pan lightly with neutral oil, then arrange the skewers in a single layer.
- 8Cook for 4 to 5 minutes per side, turning once, until the chicken is cooked through, lightly charred at the edges, and registers 165°F inside.
- 9During the last two minutes, brush the reserved peanut sauce over the skewers so it caramelizes slightly without burning.
- 10Transfer the skewers to a platter, sprinkle with chopped roasted peanuts and fresh cilantro, and serve immediately with lime wedges and any remaining warm peanut sauce for dipping.
