- 2 tbsp extra-virgin olive oil
- 1 large diced yellow onion
- 3 minced garlic cloves
- 2 diced celery stalks
- 1 large diced carrot
- 1.5 lb chopped late-season tomatoes
- 1 large diced firm apple such as Honeycrisp
- 1 medium diced zucchini or yellow squash
- 1 can (15 oz) drained cooked chickpeas
- 3 cups vegetable broth
- 1/2 cup dry farro
- 1/4 cup torn fresh basil
- 1 tbsp chopped fresh oregano
- 2 tbsp lemon juice
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 tsp red pepper flakes
Instructions
- 1Warm the olive oil in a heavy Dutch oven or large pot over medium heat until it shimmers.
- 2Add the onion, celery, and carrot. Cook, stirring occasionally, until the onion turns translucent and the edges begin to soften, about 6–7 minutes.
- 3Stir in the garlic, oregano, red pepper flakes, salt, and black pepper; cook just until fragrant, about 45 seconds.
- 4Add the chopped late tomatoes and diced apple. Cook 4–5 minutes, stirring, until the tomatoes release their juices and start to break down.
- 5Pour in the vegetable broth and bring the mixture to a lively simmer.
- 6Stir in the dry farro and the drained chickpeas. Reduce heat to maintain a gentle simmer, cover partially, and cook 20–25 minutes until the farro is tender but still pleasantly chewy.
- 7Add the diced squash during the last 8 minutes so it softens without turning mushy.
- 8Taste and adjust seasoning. Off the heat, stir in the lemon juice and most of the torn basil.
- 9Ladle into bowls, top with the remaining basil, and finish with a final drizzle of olive oil for gloss and brightness.
- 10Serve hot with crusty bread if desired; the stew thickens slightly as it sits and tastes even better the next day.
