Ingredients
- 1.25 lb mixed mushrooms (oyster, cremini, shiitake)
- 2 large crisp apples
- 1 medium fennel bulb
- 3 shallots
- 3 garlic cloves
- 2 cups cooked farro
- 1 can (15 oz), drained cannellini beans
- 1 tbsp chopped fresh rosemary
- 1 tbsp leaves fresh thyme
- 6 leaves, chopped fresh sage
- 3 tbsp olive oil
- 1 tsp lemon zest
- 1 tbsp lemon juice
- 1.25 tsp kosher salt
- 3/4 tsp black pepper
- 1/3 cup grated Parmesan cheese
- 1/4 cup torn fresh basil
Instructions
- 1Preheat the oven to 400°F. Choose a 9-by-13-inch baking dish or similar shallow casserole that can go from oven to table.
- 2Trim and tear or slice the mushrooms into bite-size pieces so they roast evenly. Core the apples and cut into thin wedges. Thinly slice the fennel and shallots; mince the garlic.
- 3In a large bowl toss the mushrooms, apples, fennel, shallots, and garlic with the olive oil, rosemary, thyme, sage, salt, and pepper until every piece is coated and aromatic.
- 4Spread the mixture in the baking dish in an even layer. Roast uncovered for 20 minutes, then stir once so the undersides can color.
- 5Continue roasting another 15 minutes until the mushrooms are deeply browned at the edges, the apples are tender-crisp, and the fennel has softened and sweetened.
- 6Remove the dish and fold in the cooked farro and drained cannellini beans so the grains and beans warm through and soak up the roasting juices.
- 7Sprinkle the Parmesan evenly over the top and return to the oven for 8 to 10 minutes until the cheese melts and turns lightly golden in spots.
- 8Finish with lemon zest, a squeeze of lemon juice, and torn basil. Bring the hot dish straight to the weekend table and let everyone scoop their own portions.
