Ingredients

  • 3 ripe peaches, halved and pitted
  • 4 ears fresh corn, husks removed
  • 1 can (15 oz) canned butter beans or lima beans, drained and rinsed
  • 1 1/2 cups cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1 small red onion, cut into thick rounds
  • 2 cups cooked quinoa or farro
  • 3/4 cup feta cheese, crumbled
  • 3 tbsp olive oil
  • 3 tbsp lime juice
  • 1 tsp honey
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/3 cup fresh cilantro, chopped
  • 1 avocado, sliced

Instructions

  1. 1Preheat a grill or grill pan to medium-high heat, about 400°F. Brush peach halves, corn ears, and onion rounds lightly with olive oil and sprinkle with salt and pepper.
  2. 2Grill the corn, turning every few minutes, until kernels are tender and charred in places, 8 to 10 minutes total. Grill peach halves cut-side down until marked and juicy, 2 to 3 minutes per side. Grill onion rounds until softened and charred at the edges, about 3 minutes per side.
  3. 3Transfer grilled produce to a cutting board. When cool enough to handle, cut corn kernels from the cobs, dice the peaches, and roughly chop the grilled onion.
  4. 4In a large mixing bowl, whisk the remaining olive oil with lime juice, honey, cumin, chili powder, salt, and black pepper until emulsified.
  5. 5Add the grilled corn, diced peaches, chopped onion, butter beans, cherry tomatoes, and diced red bell pepper to the bowl. Toss gently so everything is coated in the bright dressing without crushing the peaches.
  6. 6Warm the cooked quinoa or farro if needed, then divide it among four bowls as the base.
  7. 7Spoon the peach-corn succotash generously over each grain base. Top with crumbled feta, avocado slices, and a shower of fresh cilantro.
  8. 8Taste a bite and add an extra squeeze of lime or pinch of salt at the table if you want more pop. Serve immediately while the grilled flavors are still warm and fragrant.
