Instructions

  1. 1If using wooden skewers, soak them in water for at least 30 minutes so they do not burn on the grill. Preheat a gas or charcoal grill to medium-high heat, about 400°F, and oil the grates lightly.
  2. 2Peel the butternut squash, scoop out the seeds, and cut the flesh into 1-inch cubes. Core the apples and cut into similar 1-inch chunks, leaving the skin on for color and structure.
  3. 3Cut the red onion into thick wedges and separate into layers roughly the size of the squash pieces. Slice the zucchini into thick half-moons so everything cooks at a similar pace.
  4. 4In a large bowl, whisk together the olive oil, chopped rosemary, thyme, minced garlic, lemon juice, maple syrup, salt, and pepper until the marinade looks glossy and fragrant.
