Ingredients

  • 1.5 lb boneless skinless chicken thighs
  • 2 medium crisp apples
  • 1 large red onion
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 3 garlic cloves
  • 1 tbsp fresh thyme leaves
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 8 wooden or metal skewers

Instructions

  1. 1Soak wooden skewers in water for at least 20 minutes if using them so they do not burn on the grill.
  2. 2Pat the chicken dry and cut it into even 1-inch cubes so the pieces cook at the same rate.
  3. 3Core the apples and cut them into thick wedges, then cut the red onion into similar-size chunks that will hold up on the skewers.
  4. 4In a large bowl whisk together the olive oil, apple cider vinegar, Dijon, honey, minced garlic, thyme, salt, and pepper until the marinade looks smooth and glossy.
  5. 5Add the chicken cubes to the bowl and toss thoroughly so every piece is coated; let them sit 10 minutes at room temperature while you heat the grill.
  6. 6Preheat a gas or charcoal grill to medium-high heat, about 400°F, and oil the grates lightly so nothing sticks.
  7. 7Thread chicken, apple wedges, and onion chunks onto the skewers, alternating pieces for color and even cooking; leave a little space between items so heat can circulate.
  8. 8Place the skewers on the hot grill and cook 4 to 5 minutes per side, turning once, until the chicken shows clear grill marks and reaches 165°F inside and the apples soften and caramelize at the edges.
  9. 9Transfer the skewers to a platter and rest 3 minutes so the juices settle.
  10. 10Scatter any remaining fresh thyme over the top and serve hot as a shareable platter for weekend gatherings.
