
Grilled Apple Chicken Skewers

Ingredients
- 1.5 lb boneless skinless chicken thighs
- 2 medium crisp apples
- 1 large red onion
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 1 tbsp honey
- 3 garlic cloves
- 1 tbsp fresh thyme leaves
- 1.5 tsp kosher salt
- 1 tsp black pepper
- 8 wooden or metal skewers
Instructions
- 1Soak wooden skewers in water for at least 20 minutes if using them so they do not burn on the grill.
- 2Pat the chicken dry and cut it into even 1-inch cubes so the pieces cook at the same rate.
- 3Core the apples and cut them into thick wedges, then cut the red onion into similar-size chunks that will hold up on the skewers.
- 4In a large bowl whisk together the olive oil, apple cider vinegar, Dijon, honey, minced garlic, thyme, salt, and pepper until the marinade looks smooth and glossy.
- 5Add the chicken cubes to the bowl and toss thoroughly so every piece is coated; let them sit 10 minutes at room temperature while you heat the grill.
- 6Preheat a gas or charcoal grill to medium-high heat, about 400°F, and oil the grates lightly so nothing sticks.
- 7Thread chicken, apple wedges, and onion chunks onto the skewers, alternating pieces for color and even cooking; leave a little space between items so heat can circulate.
- 8Place the skewers on the hot grill and cook 4 to 5 minutes per side, turning once, until the chicken shows clear grill marks and reaches 165°F inside and the apples soften and caramelize at the edges.
