Ingredients

  • 2 lb bone-in skin-on chicken thighs
  • 2 cups red seedless grapes
  • 8 fresh thyme sprigs
  • 4 fresh rosemary sprigs
  • 4 garlic cloves
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 lemon
  • 1/4 cup fresh parsley

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easy cleanup. Pat the chicken thighs dry with paper towels so the skin will crisp, then place them skin-side up on the pan.
  2. 2Toss the whole grapes with a drizzle of olive oil, smashed garlic cloves, thyme, and rosemary right on the pan the chicken. Season everything generously with salt and pepper.
  3. 3Whisk the remaining olive oil with balsamic vinegar and honey in a small bowl until smooth to form a light glaze. Brush half of this mixture over the chicken skin and grapes.
  4. 4Roast for 25 minutes until the chicken skin starts turning golden and the grapes begin to soften and blister. The kitchen will smell herby and sweet.
  5. 5Remove the pan, brush the remaining glaze over the chicken and grapes, then return to the oven for another 10 to 15 minutes. Cook until the chicken reaches 165°F internally and the skin is deeply golden and crisp.
  6. 6Squeeze fresh lemon juice over the entire pan while still hot so the citrus brightens the sweet grape juices. Let the chicken rest 5 minutes on the pan.
  7. 7Chop the parsley and scatter it over the chicken and roasted grapes for a fresh finish. Spoon some of the pan juices and burst grapes over each portion.
  8. 8Serve immediately family-style straight from the sheet pan with the herbs still fragrant. Pair with a simple green salad if desired for a complete weeknight plate.
