Ingredients

  • 2.5 lbs bone-in skin-on chicken thighs
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1/4 cup olive oil
  • 1 large yellow onion
  • 2 red bell pepper
  • 10 oz cremini mushrooms
  • 5 garlic cloves
  • 1 pint cherry tomatoes
  • 2 tbsp tomato paste
  • 1.5 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp crushed red pepper flakes
  • 1/2 cup pitted green olives
  • 1/4 cup fresh basil leaves
  • 1 tbsp balsamic vinegar

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easier cleanup. Pat the chicken thighs dry and season all over with salt and pepper.
  2. 2In a large bowl toss the thick-sliced onion, thick-sliced bell peppers, halved mushrooms, smashed garlic cloves, and whole cherry tomatoes with most of the olive oil, tomato paste, oregano, thyme, and red pepper flakes until everything is evenly coated.
  3. 3Spread the vegetable mixture in a single layer on the prepared sheet pan, leaving space for the chicken. Nestle the seasoned chicken thighs skin-side up among the vegetables.
  4. 4Drizzle the remaining olive oil over the chicken skin. Roast for 25 minutes until the chicken skin starts to crisp and the vegetables begin to soften and caramelize.
  5. 5Remove the pan from the oven, scatter the olives over the vegetables, and gently stir the vegetables the chicken without disturbing the skin.
  6. 6Return the pan to the oven and roast another 20 to 25 minutes until the chicken reaches 175°F internally, the skin is deeply golden and crisp, and the tomatoes have burst into a rustic sauce.
  7. 7Drizzle the balsamic vinegar over the entire pan and toss the vegetables lightly so they pick up the sweet-tart glaze and the tomato-herb juices.
  8. 8Let the pan rest 5 minutes so the juices settle. Tear the fresh basil leaves over the top and serve family-style straight from the sheet pan with the signature peppers, onions, mushrooms, olives, and tomato braise clinging to every piece.
