Ingredients

  • 1 1/2 cups fresh cranberries
  • 1 lb carrots
  • 12 oz parsnips
  • 1 lb sweet potatoes
  • 1 large red onion
  • 3 tbsp olive oil
  • 2 tbsp maple syrup
  • 1 tbsp balsamic vinegar
  • 8 leaves fresh sage leaves
  • 4 garlic cloves
  • 1 1/4 tsp kosher salt
  • 3/4 tsp black pepper
  • 4 fresh thyme sprigs
  • 1 tsp orange zest

Instructions

  1. 1Preheat the oven to 425°F and line a large rimmed sheet pan with parchment for easy cleanup and even browning.
  2. 2Peel the carrots, parsnips, and sweet potatoes, then cut everything into roughly equal 1-inch chunks so they roast at the same rate.
  3. 3Slice the red onion into thick wedges and smash the garlic cloves lightly, leaving them mostly whole for mellow roasted flavor.
  4. 4Toss the root vegetables, onion, and garlic on the sheet pan with olive oil, salt, pepper, and half the sage leaves torn by hand until every piece is lightly coated.
  5. 5Spread into a single layer with space between pieces; roast for 20 minutes until the edges start to caramelize and the sweet potatoes soften slightly.
  6. 6Meanwhile, warm the cranberries, maple syrup, and balsamic vinegar in a small saucepan over medium heat until the berries burst and the mixture thickens into a glossy glaze, about 6 to 8 minutes; stir in orange zest off the heat.
  7. 7Pull the pan, drizzle and toss the vegetables with most of the cranberry glaze, tuck in the remaining sage and the thyme sprigs, then return to the oven for 12 to 15 minutes more until deeply golden and fork-tender.
  8. 8Transfer the roasted vegetables to a large platter, spoon over any remaining glaze from the pan, and finish with a few extra torn sage leaves for a bright herbal hit.
  9. 9Serve family-style straight from the platter so guests can scoop generous portions alongside whatever else is on the table.
