Often linked to early American deli counters, the Reuben thrives on its bold stack of corned beef, Swiss, and tangy sauerkraut. Griddled on buttered rye with Thousand Island dressing, it melts into a weeknight sandwich hero.

Ingredients
- 8 slices seeded rye bread slices
- 1 lb corned beef, thinly sliced
- 1 1/2 cups sauerkraut, drained and squeezed dry
- 8 slices Swiss cheese slices
- 1/2 cup Thousand Island dressing
- 4 tbsp unsalted butter, softened
- 1 tsp caraway seeds
- 4 dill pickle spears
- 1/2 tsp black pepper
Instructions
- 1Pat the drained sauerkraut very dry with paper towels so the bread stays crisp, then toss it lightly with black pepper and caraway seeds. Set out the rye slices and spread a thin layer of Thousand Island dressing on one side of every slice.
- 2Warm a large skillet or griddle over medium heat. Butter the outer faces of four bread slices and place them butter-side down in the pan.
- 3Layer Swiss cheese on the dressing side of the bread in the pan, then mound corned beef evenly over the cheese so it covers edge to edge.
- 4Scatter the seasoned sauerkraut over the corned beef, pressing gently so it stays put. Top with a second slice of Swiss and close with the remaining bread, dressing-side in and outer face buttered.
- 5Cook the first side 3 to 4 minutes until the rye is deep golden and the bottom cheese begins to melt. Press lightly with a spatula for even browning.
- 6Flip carefully with a wide spatula. Continue cooking another 3 to 4 minutes until the second side is equally golden and cheese is fully melted and gooey.
- 7If needed, tent loosely with foil for the last minute so the center heats through without scorching the crust. Transfer finished sandwiches to a cutting board.
- 8Rest 1 minute, then slice each sandwich on the diagonal. Serve immediately with a dill pickle spear on the side and extra dressing for dipping if desired.
