Cheddar-Crusted Chicken Fried Steak

Chicken fried steak is a Southern classic that borrows the dredge-and-fry method of fried chicken for tender cube steak. This version locks in a sharp cheddar and panko crust that crisps golden while the meat stays juicy beneath.

Ingredients

  • 4 (about 1.5 lb) cube steaks
  • 1 cup all-purpose flour
  • 1.5 cups finely shredded sharp cheddar
  • 1 cup panko breadcrumbs
  • 1.5 tsp kosher salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 large eggs
  • 1/2 cup buttermilk
  • 3/4 cup vegetable oil
  • 2 tbsp chopped fresh chives

Instructions

  1. 1Blot the cube steaks dry and season both sides with salt and pepper. In a wide shallow bowl combine flour, half the shredded cheddar, panko, smoked paprika, garlic powder, and remaining salt and pepper, tossing until evenly mixed.
  2. 2In a second bowl whisk the eggs with buttermilk until smooth. Dredge each steak first in the plain flour if needed for grip, then through the egg wash, and finally press firmly into the cheddar-panko mixture so cheese flecks coat every surface.
  3. 3Transfer breaded steaks to a rack and rest 8 to 10 minutes; the cheese will begin to adhere as the coating hydrates. Heat oil in a heavy 12-inch skillet over medium heat until it reaches 350°F or a breadcrumb sizzles gently.
  4. 4Carefully add two steaks and fry 3 to 4 minutes per side, adjusting heat so the cheese browns without scorching. The crust should turn deep golden with visible melted cheddar pockets and sound crisp when tapped.
  5. 5Move finished steaks to a paper-towel-lined rack in a warm oven. Repeat with remaining steaks, adding a splash more oil if the pan looks dry.
  6. 6While the last batch fries, sprinkle the remaining shredded cheddar over the hot steaks so residual heat melts it into an extra cheesy top layer.
  7. 7Rest the steaks 2 minutes so juices settle and the cheese crust firms slightly. Scatter fresh chives over the top for color and a mild onion bite.
  8. 8Serve at once while the cheddar crust is still shatteringly crisp and the steak interior stays tender. Pair with simple sides so the cheesy coating remains the star.
