Ingredients
- 2 medium acorn squash
- 1.5 cups seedless red and green grapes
- 1.5 cups cooked quinoa
- 3/4 cup crumbled feta cheese
- 1/2 cup toasted walnuts
- 1/3 cup fresh parsley
- 2 tbsp fresh dill
- 3 scallions
- 3 tbsp extra-virgin olive oil
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
Instructions
- 1Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- 2Halve each acorn squash from stem to tip and scoop out the seeds and stringy pulp with a spoon.
- 3Brush the cut sides and cavities with olive oil and season lightly with salt, pepper, and garlic powder.
- 4Place the squash halves cut-side down on the baking sheet and roast for 25 to 30 minutes until the flesh is fork-tender and the edges begin to caramelize.
- 5While the squash roasts, roughly chop the grapes so some burst and release juice into the filling.
- 6In a mixing bowl combine the cooked quinoa, chopped grapes, crumbled feta, chopped toasted walnuts, minced scallions, chopped parsley, chopped dill, lemon zest, and lemon juice.
- 7Drizzle in the remaining olive oil and toss the filling until everything is evenly distributed and lightly coated. Taste and adjust salt if needed.
- 8Remove the squash from the oven and carefully flip the halves cut-side up. The cavities should be soft and ready to hold stuffing.
- 9Mound the grape-quinoa mixture generously into each squash half, packing it lightly so it stays put.
- 10Return the stuffed squash to the oven for 12 to 15 minutes until the filling is heated through and the feta softens.
- 11Finish with an extra sprinkle of fresh herbs and a crack of black pepper. Serve hot as a colorful main that scales easily for a gathering.
