
Apple-Glazed Chicken with Sautéed Greens

Ingredients
- 4 (6 oz each) boneless skinless chicken breasts
- 2 medium crisp apples
- 1/2 cup apple cider
- 1 tbsp Dijon mustard
- 1 tsp leaves fresh thyme
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 3 garlic cloves
- 1 large bunch Swiss chard or kale
- 1 tbsp lemon juice
- 1 tbsp unsalted butter
Instructions
- 1Pat the chicken dry and season both sides generously with salt and pepper.
- 2Core the apples and cut them into thin half-moons; mince the garlic and strip the chard leaves from the stems, tearing the leaves into bite-size pieces.
- 3Heat a large skillet over medium-high heat and add half the olive oil until it shimmers.
- 4Sear the chicken for 5 to 6 minutes per side until deeply golden and nearly cooked through; transfer to a plate.
- 5Lower the heat to medium, add the remaining oil and the apple slices, and cook 3 to 4 minutes until they begin to soften and take on color.
- 6Stir in the garlic, thyme, apple cider, and Dijon, scraping up any browned bits from the pan.
- 7Return the chicken to the skillet, nestling it among the apples, and simmer 4 to 5 minutes until the sauce thickens into a glossy glaze and the chicken reaches 165°F.
- 8In a second skillet, melt the butter over medium heat, add the greens with salt, and sauté 3 to 4 minutes until just wilted and bright.
- 9Finish the greens with a squeeze of lemon juice.
- 10Plate the chicken with the apple glaze spooned over the top and the sautéed greens alongside.
