  • 4 (about 2 lb) bone-in skin-on chicken thighs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large shallot
  • 3 garlic cloves
  • 2 firm apples
  • 1 1/2 cups seedless red grapes
  • 1/2 cup apple cider
  • 1 tbsp Dijon mustard
  • 4 sprigs fresh thyme
  • 1 tbsp butter
  • 1 tsp apple cider vinegar

Instructions

  1. 1Pat the chicken thighs dry and season both sides generously with salt and black pepper.
  2. 2Heat olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  3. 3Place chicken skin-side down and cook undisturbed 6 to 8 minutes until the skin is deep golden and crisp.
  4. 4Flip the thighs and cook 3 minutes more on the second side, then transfer to a plate.
  5. 5Reduce heat to medium, add sliced shallot to the same skillet, and cook 2 minutes until softened.
  6. 6Stir in minced garlic and cook 30 seconds until fragrant.
