Ingredients

  • 3 medium ripe late-season tomatoes
  • 2 medium tart apples
  • 3 tbsp honey
  • 1 tbsp fresh lemon juice
  • 3/4 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1 tsp grated fresh ginger
  • 1/8 tsp pinch of salt
  • 2 tbsp chopped fresh mint leaves
  • 1 tsp orange zest

Instructions

  1. 1Core the tomatoes and roughly chop them, reserving any juices. Peel, core, and dice the apples into 1/2-inch pieces.
  2. 2Place a medium saucepan over medium heat and add the chopped tomatoes with their juices plus the diced apples.
  3. 3Stir in the honey, lemon juice, cinnamon, cardamom, grated ginger, and salt until the spices bloom and coat the fruit.
  4. 4Bring the mixture to a gentle simmer, then reduce heat to medium-low and cook uncovered for 18 to 22 minutes, stirring occasionally.
  5. 5Continue cooking until the apples soften and the tomatoes break down into a thick, jammy sauce that coats the spoon.
  6. 6Remove from heat and stir in the orange zest and most of the chopped mint, saving a little mint for garnish.
  7. 7Taste and adjust brightness with an extra squeeze of lemon if needed; the compote should taste sweet-tart and warmly spiced.
  8. 8Spoon warm into small bowls or over yogurt or ice cream. Finish with the remaining mint for a fresh herbal lift.
  9. 9Store leftovers covered in the fridge up to 4 days; rewarm gently before serving.
