Ingredients

  • 3 medium apples
  • 1 1/2 cups seedless black or red grapes
  • 2 tbsp unsalted butter or ghee
  • 3 tbsp monk fruit sweetener or erythritol
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cardamom
  • 1 tsp grated fresh ginger
  • 3 fresh thyme sprigs
  • 1 tbsp lemon juice
  • 1/4 cup water or unsweetened apple cider
  • 1/2 tsp vanilla extract
  • 1/8 tsp pinch salt

Instructions

  1. 1Core the apples and cut them into even 3/4-inch chunks so they soften at the same pace.
  2. 2Melt the butter in a medium saucepan over medium heat until it foams and smells nutty.
  3. 3Add the apple chunks and cook, stirring occasionally, for 4–5 minutes until the edges just begin to turn translucent.
  4. 4Stir in the grapes, sweetener, cinnamon, cardamom, grated ginger, thyme sprigs, lemon juice, water, vanilla, and salt.
  5. 5Bring the mixture to a gentle simmer, then reduce heat to medium-low so the liquid barely bubbles.
  6. 6Cook uncovered for 12–15 minutes, stirring every few minutes, until the apples are fork-tender and the grapes burst and release their juices.
  7. 7The compote is ready when it looks glossy and spoon-thick; mash a few apple pieces against the side of the pan if you want a chunkier sauce.
  8. 8Remove and discard the thyme sprigs; taste and adjust sweetness or spice if needed.
  9. 9Let the compote rest off heat for 5 minutes so the flavors deepen and the syrup thickens further.
