  • 4 large baking apples (Honeycrisp or Granny Smith)
  • 3 tbsp unsalted butter
  • 1/4 cup coconut sugar or light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp fresh lemon juice
  • 1/4 cup rolled oats
  • 3 tbsp chopped walnuts
  • 1 pinch of sea salt
  • 1/3 cup water

Instructions

  1. 1Preheat the oven to 375°F and lightly grease a small baking dish that holds the apples snugly.
  2. 2Wash the apples, then core each one carefully from the top, leaving the bottom intact to form a cup; scoop out a little extra flesh if needed for filling space.
  3. 3In a small bowl stir together the sugar, cinnamon, nutmeg, oats, walnuts, and salt until evenly mixed.
  4. 4Rub a little of the butter inside each apple cavity and the rims, then drizzle the lemon juice over the cut surfaces to keep them bright.
  5. 5Pack the spiced oat-walnut mixture firmly into each apple, mounding any extra on top.
  6. 6Dot the remaining butter over the filled apples and pour the water into the bottom of the dish so the fruit steams gently while baking.
  7. 7Bake uncovered for 35 to 45 minutes, basting once or twice with the pan juices, until the apples are tender when pierced with a knife and the tops look golden and caramelized.
  8. 8Let the apples rest 5 minutes so the juices thicken slightly, then spoon the warm pan syrup over each one before serving.
  9. 9Serve straight from the dish while still steaming hot, optionally with a spoonful of plain yogurt or a drizzle of honey if desired.
