  • 8 slices sturdy white sandwich bread
  • 3 tbsp unsalted butter
  • 1 cup shredded sharp cheddar cheese
  • 3/4 cup shredded Gruyère cheese
  • 3/4 cup shredded low-moisture mozzarella
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 2 tbsp fresh chives
  • 1 tsp Dijon mustard

Instructions

  1. 1Preheat a large cast-iron skillet or griddle over medium heat and set the oven to 200°F to keep finished pieces warm.
  2. 2In a bowl combine the three shredded cheeses with garlic powder, onion powder, and smoked paprika until evenly mixed.
  3. 3Spread a thin layer of softened butter on one side of every bread slice; flip four of the slices and spread a whisper of Dijon on the unbuttered faces.
  4. 4Pile a generous mound of the seasoned three-cheese blend onto the mustard side of those four slices, pressing lightly so it holds.
  5. 5Top each with a remaining bread slice, buttered side facing out, to form four sandwiches.
  6. 6Place two sandwiches in the hot skillet and cook 3 to 4 minutes until the underside is deep golden and the cheese begins to soften.
  7. 7Flip carefully with a wide spatula and cook another 3 to 4 minutes until the second side is equally crisp and cheese oozes at the edges.
  8. 8Transfer the finished sandwiches to the warm oven on a wire rack while you cook the remaining two the same way.
  9. 9Let the hot sandwiches rest 1 minute on a cutting board so the molten cheese settles slightly, then cut each into two neat squares.
  10. 10Scatter snipped chives over the cut faces so the green flecks stick to the melted cheese.
