  • 6 medium tart apples
  • 1/3 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1 Tbsp fresh lemon juice
  • 3/4 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup cold unsalted butter
  • 1/4 tsp kosher salt
  • for serving vanilla ice cream

Instructions

  1. 1Preheat the oven to 375°F and position a rack in the center. Lightly butter a 10-inch cast-iron skillet or similar oven-safe baking dish so the fruit juices stay contained.
  2. 2Peel, core, and slice the apples into even half-inch wedges so they soften at the same rate. Toss the slices in a large bowl with the granulated sugar, half the cinnamon, the nutmeg, ginger, and lemon juice until every piece looks glossy.
  3. 3Spread the seasoned apples in an even layer in the prepared skillet; they should mound slightly in the center because they will cook down.
  4. 4In a separate bowl combine the flour, oats, brown sugar, remaining cinnamon, and salt. Cut the cold butter into small cubes and work it in with your fingertips or a pastry blender until the mixture forms pea-sized clumps that hold together when squeezed.
  5. 5Scatter the oat topping evenly over the apples, covering most of the fruit but leaving a few gaps so steam can escape and the edges caramelize.
  6. 6Bake until the topping is deep golden brown and the fruit juices bubble thickly the edges, 35 to 42 minutes. If the top browns too fast, tent loosely with foil for the last 10 minutes.
  7. 7Remove the skillet from the oven and let the crisp rest on a wire rack for at least 15 minutes so the juices thicken into a spoonable sauce.
  8. 8Scoop warm portions into bowls and finish with a scoop of vanilla ice cream that melts into the spiced apple juices.
