Ingredients
- 2 cups plain Greek yogurt
- 3 tbsp plus more for drizzle honey
- 1 tsp vanilla extract
- 2 cups seedless mixed grapes
- 1 cup granola
- 1/4 cup toasted sliced almonds
- 1 tsp fresh lemon zest
- 2 tbsp fresh mint leaves
- to finish pinch of flaky salt
Instructions
- 1In a bowl stir the Greek yogurt with three tablespoons of honey, vanilla, and lemon zest until smooth and lightly sweetened.
- 2Rinse the grapes, pat dry, and halve any larger ones so they nestle easily in the layers.
- 3Choose four clear glasses or small jars so the colors show.
- 4Spoon a layer of the honeyed yogurt into the bottom of each glass.
- 5Add a generous handful of halved grapes on top of the yogurt.
- 6Sprinkle a layer of granola over the grapes for crunch.
- 7Repeat the layers once more, ending with a final dollop of yogurt.
- 8Scatter the remaining grapes and the toasted almonds over the tops.
- 9Drizzle each parfait with a little extra honey and finish with a tiny pinch of flaky salt.
- 10Tuck a few torn mint leaves into the top for aroma and color.
- 11Serve right away so the granola stays crisp against the cool yogurt and juicy grapes.
- 12If prepping ahead, keep the components separate and assemble just before eating.
