Ingredients

  • 2 cups cubed fresh sugar pumpkin
  • 3 cups sliced tart apples
  • 1 tbsp lemon juice
  • 1/3 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 3/4 cup all-purpose flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup cold unsalted butter
  • 1 tsp vanilla extract
  • 1/8 tsp pinch of salt

Instructions

  1. 1Preheat the oven to 375°F and lightly butter a 10-inch cast-iron skillet or similar oven-safe baking dish.
  2. 2Peel and cube the fresh sugar pumpkin into bite-size pieces, then peel, core, and slice the tart apples.
  3. 3Toss the pumpkin cubes and apple slices together in a large bowl with the lemon juice so the fruit stays bright.
  4. 4Sprinkle the granulated sugar, cinnamon, nutmeg, and ginger over the fruit and toss gently until every piece is lightly coated.
  5. 5Spread the seasoned fruit evenly in the prepared skillet, pressing it into a mostly even layer.
  6. 6In a separate bowl combine the flour, oats, brown sugar, and salt.
  7. 7Cut the cold butter into small cubes and work it into the dry mixture with your fingertips or a pastry blender until the topping looks like coarse crumbs with some pea-size bits remaining.
  8. 8Stir the vanilla into the crumb mixture, then scatter the topping generously and evenly over the fruit.
  9. 9Bake the crisp on the center rack for 35 to 40 minutes until the topping is deep golden and the fruit juices are bubbling thickly the edges.
  10. 10Remove the skillet from the oven and let the crisp rest for 10 to 15 minutes so the juices thicken slightly.
  11. 11Scoop warm portions into bowls, making sure each serving gets both fruit and plenty of crunchy topping.
  12. 12Serve as-is or with a spoonful of vanilla ice cream or lightly sweetened whipped cream if desired.
