Instructions

  1. 1Preheat the oven to 475°F with a pizza stone or inverted baking sheet on the middle rack for at least 30 minutes so it is screaming hot.
  2. 2On a lightly floured surface, stretch the pizza dough into a 12-inch round, leaving a slightly thicker rim; transfer it to a cornmeal-dusted pizza peel or parchment.
  3. 3In a small skillet over medium heat, warm olive oil and fry the sage leaves until they turn dark green and crisp, about 45 seconds; transfer leaves to a paper towel and keep the infused oil.
  4. 4Mince the garlic and stir it into the pumpkin puree along with salt, black pepper, and red pepper flakes until smooth and spreadable.
  5. 5Brush the stretched dough lightly with the sage-infused oil, then spread the seasoned pumpkin mixture evenly, stopping short of the rim.
