Ingredients
- 5 medium ripe but firm pears
- 1 1/4 cups fresh pecan halves
- 3/4 cup old-fashioned rolled oats
- 1/3 cup whole-wheat flour or almond flour
- 5 Tbsp unsalted butter, cold and cubed
- 1/4 cup pure maple syrup
- 1 tsp ground cinnamon
- 1 tsp fresh thyme leaves
- 1 Tbsp fresh lemon juice
- 1/4 tsp pinch of fine sea salt
Instructions
- 1Preheat the oven to 375°F and lightly butter an 8-inch square or similar baking dish.
- 2Toast half the pecan halves in a dry skillet over medium heat until fragrant, about 4 minutes; cool and roughly chop.
- 3Peel, core, and slice the pears into thick wedges; toss them with lemon juice, half the maple syrup, half the cinnamon, and the thyme.
- 4Spread the seasoned pears evenly in the prepared dish.
- 5In a bowl combine the oats, flour, remaining cinnamon, salt, and the chopped toasted pecans.
- 6Cut in the cold butter with a pastry blender or fingertips until the mixture forms coarse crumbs, then drizzle in the remaining maple syrup and toss lightly.
- 7Scatter the pecan oat topping evenly over the pears, pressing gently so it clings.
- 8Bake 35 to 40 minutes until the pears are bubbling and tender and the topping is deep golden and crisp.
- 9Cool 10 minutes so the juices thicken slightly, then spoon into bowls while still warm to highlight the roasted pecan aroma.
