
Mocha Fudge Brownies

Ingredients
- 1/2 cup unsalted butter
- 1 cup semi-sweet chocolate chips
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp instant espresso powder
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 tsp salt
- 1/4 cup extra chocolate chips for topping
Instructions
- 1Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- 2Melt the butter and chocolate chips together in a heatproof bowl set over a pot of barely simmering water, stirring until smooth and glossy; remove from heat.
- 3Whisk the sugar into the melted chocolate mixture until fully combined and slightly cooled, about 1 minute.
- 4Beat in the eggs one at a time, then stir in the vanilla and espresso powder until the batter looks shiny and thick.
- 5Sift the flour, cocoa powder, and salt directly over the bowl and fold gently with a spatula just until no dry streaks remain.
- 6Pour the batter into the prepared pan and spread it evenly into the corners.
- 7Sprinkle the extra chocolate chips evenly over the top and gently press them in.
- 8Bake for 22 to 25 minutes until the edges are set and a toothpick inserted in the center comes out with a few moist crumbs.
- 9Cool completely in the pan on a wire rack for at least 1 hour so the fudgy texture firms up.
- 10Lift out using the parchment, cut into six squares, and serve so the mocha-chocolate intensity is front and center.
