Ingredients
- 1 cup all-purpose flour
- 3 large eggs
- 1 cup whole milk
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1/4 cup beef drippings or vegetable oil
- 8 oz leftover roast beef or deli roast beef
- 1 1/2 cups beef broth
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour for gravy
- 1 tsp Worcestershire sauce
- 2 tbsp fresh chives
Instructions
- 1Whisk the flour, eggs, milk, salt, and pepper until the batter is silky smooth. Rest it 20 minutes so air bubbles settle and the rise will be more even.
- 2Preheat oven to 450°F. Spoon a scant teaspoon of drippings or oil into each cup of a 24-cup mini muffin tin. Heat the tin in the oven until the fat is smoking hot, about 7 to 9 minutes.
- 3Carefully pour batter into each hot cup, filling them two-thirds full. The batter should immediately bubble at the edges.
- 4Bake 12 to 15 minutes until the mini puddings are puffed high, golden-brown, and crisp. Keep the oven door closed the entire time so they do not deflate.
- 5While they bake, make the gravy: melt butter in a saucepan over medium heat, whisk in flour, and cook 1 minute. Gradually whisk in beef broth and Worcestershire until smooth and thickened, 4 to 5 minutes. Season with salt and pepper.
- 6Warm the sliced or shredded roast beef in a little of the gravy so it stays juicy. Snip chives finely for garnish.
- 7Remove the mini puddings from the tin while still hot. If any stick, loosen gently with a small offset spatula.
- 8Arrange the bites on a platter, top each with a fold of warm beef, spoon over glossy gravy so it pools in the hollows, and finish with chives. Serve immediately as shareable celebration bites while the shells are still shatter-crisp.
