Ingredients
- 1 can (16 oz) refrigerated biscuit dough
- 5 oz sliced pepperoni
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 3 tbsp grated Parmesan cheese
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 1 large egg
- 3/4 cup marinara sauce
- as needed olive oil spray
Instructions
- 1Preheat the oven to 375°F and lightly spray a 12-cup muffin tin with olive oil so the bites release cleanly.
- 2Separate the biscuit dough into individual pieces and flatten each into a 4-inch round on a lightly floured counter.
- 3In a bowl, stir together the ricotta, half the mozzarella, the Parmesan, oregano, and red pepper flakes until creamy and well combined.
- 4Place a spoonful of the cheese mixture in the center of each dough round, then top with several folded pepperoni slices and the remaining mozzarella.
- 5Gather the edges of the dough up and over the filling, pinching firmly at the top to seal into a neat pouch; place each pouch seam-side down in a muffin cup.
- 6Beat the egg and brush it lightly over the tops of the sealed bites for shine and color.
- 7Bake for 16 to 18 minutes until the dough is puffed, deep golden, and the pepperoni aroma fills the kitchen.
- 8Let the bites rest in the tin for 2 minutes, then carefully lift them out with a small offset spatula onto a serving plate.
- 9Warm the marinara sauce and serve it in a bowl for dipping so every crispy bite gets a saucy finish.
