  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
  • 1 cup whipped cream for topping
  • 1 tsp extra key lime zest for garnish

Instructions

  1. 1Preheat the oven to 325°F. Line a mini muffin tin with 16 paper liners or lightly grease a silicone mini-muffin mold.
  2. 2Stir the graham cracker crumbs, melted butter, and granulated sugar together until the crumbs are evenly moistened. Press one rounded teaspoon of the mixture firmly into the bottom of each cup to form a compact crust.
  3. 3In a large bowl beat the softened cream cheese on medium speed until completely smooth and fluffy, about 2 minutes, scraping the bowl halfway.
  4. 4Add the sweetened condensed milk, key lime juice, key lime zest, egg, vanilla extract, and sour cream. Beat on low speed just until combined and silky; avoid overmixing once the egg is in.
  5. 5Spoon the cheesecake batter evenly over the crusts, filling each cup nearly to the top. Smooth the surfaces with the back of a small spoon.
  6. 6Bake for 14 to 17 minutes until the centers are just set and no longer look wet; a slight jiggle is fine. Cool in the pan for 20 minutes, then transfer to the refrigerator and chill for at least 2 hours until firm.
