Instructions
- 1Wipe all mushrooms clean, trim stems, and dice them small so they melt into a jammy texture that still keeps gentle bite.
- 2Peel, core, and dice the apples into half-inch pieces that will soften without turning to complete mush.
- 3Melt butter in a medium saucepan over medium heat, add the diced mushrooms, and sauté until they release liquid and begin to brown lightly at the edges, 5 to 7 minutes.
- 4Stir in the diced apples, honey, lemon juice, cinnamon stick, star anise, vanilla, salt, and the splash of water or cider.
- 5Bring the mixture to a gentle simmer, then reduce heat to low and cook uncovered, stirring often, until apples are tender and the syrup thickens to a glossy spoon-coating consistency, 18 to 22 minutes.
