Ingredients

  • 3 medium apples, cored and sliced 1/4-inch thick
  • 2 medium ripe pears, cored and sliced 1/4-inch thick
  • 1/4 cup honey
  • 1 tbsp fresh lemon juice
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 pinch of sea salt
  • 1 cup old-fashioned rolled oats
  • 1/2 cup almond flour
  • 1/3 cup chopped almonds
  • 5 tbsp unsalted butter, cold and cubed
  • 3 tbsp maple sugar or coconut sugar

Instructions

  1. 1Preheat the oven to 375°F. Choose a 10-inch oven-safe skillet or similar baking dish.
  2. 2In a large bowl toss the apple and pear slices with honey, lemon juice, cinnamon, ginger, and salt until the fruit is evenly glossy.
  3. 3Spread the fruit mixture evenly in the skillet; it should look generous but not overflowing.
  4. 4In another bowl combine the oats, almond flour, chopped almonds, and maple sugar.
  5. 5Add the cold butter cubes and work them in with your fingertips or a pastry blender until the mixture forms coarse, pea-sized clumps that hold together when pressed.
  6. 6Scatter the oat topping evenly over the fruit, covering most of the surface while leaving a few gaps for steam to escape.
  7. 7Bake for 30 to 35 minutes until the topping is deep golden and crisp and the fruit juices bubble thickly the edges.
  8. 8If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  9. 9Remove from the oven and let the crisp rest 10 minutes so the juices settle and the topping stays crunchy.
  10. 10Spoon into bowls while still warm, making sure each serving gets both soft fruit and plenty of the honeyed oat crust.
