
Honey Roasted Squash Apple Bites

Ingredients
- 1 small (about 1.5 lb) butternut squash
- 2 medium crisp apples
- 3 tbsp honey
- 2 tbsp melted butter
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp pinch of salt
- 1/3 cup chopped walnuts
- 1 tsp fresh thyme leaves
- 1/2 cup Greek yogurt for dipping
- 1 tbsp extra honey for drizzling
Instructions
- 1Preheat the oven to 400°F and line a large rimmed baking sheet with parchment.
- 2Peel the squash, scoop out the seeds, and cut the flesh into ¾-inch cubes.
- 3Core the apples and cut them into matching ¾-inch cubes so everything roasts evenly.
- 4In a large bowl whisk together the honey, melted butter, cinnamon, nutmeg, and salt until smooth.
- 5Add the squash and apple cubes to the bowl and toss thoroughly so every piece is coated.
- 6Spread the cubes in a single layer on the prepared sheet, leaving a little space between them.
- 7Roast for 18 minutes, then sprinkle the walnuts over the pan and continue roasting 8–10 minutes more until the edges are caramelized and the squash is tender when pierced.
- 8Remove the pan, scatter the fresh thyme leaves over the hot bites, and let them rest 3 minutes so the honey glaze sets slightly.
- 9Transfer the warm bites to a platter and place a small bowl of Greek yogurt in the center.
- 10Drizzle the remaining honey over the yogurt and serve family-style so everyone can spear bites and dip.
