Ingredients
- 2 cups roasted unsalted peanuts
- 1/3 cup honey
- 2 tbsp light brown sugar
- 2 tbsp butter
- 1 tsp vanilla extract
- 1/2 tsp ground cinnamon
- 1/2 tsp fine sea salt
- 1/2 tsp flaky sea salt for finishing
Instructions
- 1Line a large baking sheet with parchment paper and set it near the stove for quick scooping.
- 2In a medium saucepan over medium heat, melt the butter with the honey and brown sugar, stirring until the sugar dissolves and the mixture starts to bubble gently.
- 3Continue cooking the syrup for 2 to 3 minutes, stirring often, until it thickens slightly and smells caramelized.
- 4Remove the pan from heat and stir in the vanilla, cinnamon, and fine sea salt until fragrant and smooth.
- 5Immediately fold in the roasted peanuts, coating every nut thoroughly in the hot honey mixture.
- 6Working quickly, drop heaping spoonfuls of the coated peanuts onto the prepared sheet, forming small rustic clusters.
- 7Sprinkle flaky sea salt over the tops while the clusters are still warm and sticky.
- 8Let the clusters cool completely at room temperature for 20 to 30 minutes until the honey shell hardens and snaps.
- 9Break apart any that fused together, then store in an airtight container so they stay crunchy.
- 10Serve as a snack, ice-cream topper, or lunchbox treat.
