Instructions

  1. 1Preheat the oven to 400°F and line a rimmed baking sheet with parchment. Rinse and thoroughly dry the grapes, then spread them in a single layer.
  2. 2Drizzle the grapes with honey, sprinkle with thyme leaves, lemon zest, and flaky sea salt, then toss gently with clean hands so every grape is lightly coated.
  3. 3Roast until the grapes soften, skins wrinkle slightly, and juices begin to caramelize and bubble, about 18 to 22 minutes. The kitchen should smell sweet and herbal.
  4. 4Remove the pan and immediately splash the hot grapes with lemon juice so the bright acid lifts the honey. Let the roasted grapes cool to warm room temperature, about 15 minutes; reserve any syrupy pan juices.
