Ingredients

  • 3 cups seedless red or black grapes
  • 2 cups ripe cherry tomatoes
  • 1/3 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 6 tablespoons cold unsalted butter
  • 1/4 cup sliced almonds

Instructions

  1. 1Preheat the oven to 375°F and lightly butter an 8-inch square baking dish so the fruit juices bubble without sticking to the sides.
  2. 2Halve the grapes and cherry tomatoes and place them in a large mixing bowl; the mix should look bright and jewel-toned.
  3. 3Add granulated sugar, lemon juice, cornstarch, and vanilla to the fruit and toss until everything is evenly coated and the cornstarch disappears into the juices.
  4. 4Scrape the fruit mixture into the prepared baking dish and spread it into an even layer so it will cook uniformly.
  5. 5In a separate bowl combine the oats, flour, brown sugar, cinnamon, and salt, then cut in the cold butter with a pastry blender or fingertips until the mixture forms coarse, pea-sized clumps.
  6. 6Stir the sliced almonds into the oat topping so every handful has a little nutty crunch.
  7. 7Scatter the topping evenly over the fruit, leaving a few gaps so steam can escape and the juices can bubble up the edges.
  8. 8Bake for 32 to 38 minutes until the topping is deep golden brown, the fruit is bubbling vigorously at the corners, and the kitchen smells like warm caramelized grapes.
  9. 9Cool the crisp on a wire rack for at least 15 minutes so the juices thicken into a spoonable sauce before scooping into bowls.
  10. 10Serve warm, optionally with a spoonful of plain yogurt or a light drizzle of honey if you want extra creaminess without heavy sauces.
