Ingredients

  • 4 cups seedless green grapes
  • 1/4 cup packed fresh basil leaves
  • 2 tablespoons fresh mint leaves
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 3 tablespoons fresh lemon juice
  • 1/8 teaspoon pinch of kosher salt
  • optional extra basil leaves for garnish

Instructions

  1. 1Combine the sugar and water in a small saucepan over medium heat; stir until the sugar fully dissolves and the syrup just begins to simmer, then remove from heat and cool completely.
  2. 2Wash and thoroughly dry the grapes; remove any stems.
  3. 3Place the grapes, cooled simple syrup, basil, mint, lemon juice, and salt in a blender.
  4. 4Blend on high until the mixture is completely smooth and bright green flecks of herb are evenly distributed, about 45 to 60 seconds.
  5. 5Taste and adjust brightness with an extra squeeze of lemon if needed; the base should taste slightly sweeter than you want the finished sorbet.
  6. 6Pour the purée through a fine-mesh strainer into a clean bowl, pressing on the solids to extract maximum liquid; discard the pulp.
  7. 7Transfer the strained liquid to a shallow metal pan and freeze for 45 minutes.
  8. 8Scrape and stir vigorously with a fork to break up ice crystals, then return to the freezer.
  9. 9Repeat the scrape-and-stir process every 30 minutes for about 2 to 3 hours until the sorbet is fluffy, pale, and scoopable.
  10. 10For a smoother texture, briefly pulse the frozen mixture in a food processor just before the final freeze.
  11. 11Scoop into chilled bowls or small glasses, garnish with a fresh basil leaf, and serve immediately as a light, shareable finish to a weekend meal.
