Ingredients
- 4 cups seedless green grapes
- 1/2 cup packed fresh basil leaves
- 1/2 cup granulated sugar
- 1/2 cup water
- 3 tbsp fresh lemon juice
- 1 pinch of kosher salt
- optional extra basil leaves for garnish
Instructions
- 1Combine the sugar and water in a small saucepan over medium heat, stirring until the sugar fully dissolves into a clear simple syrup; remove from heat and cool completely.
- 2Rinse the grapes and basil leaves, then pat dry. Place the grapes in a blender along with the cooled syrup, lemon juice, and salt.
- 3Tear the basil leaves roughly and add them to the blender; puree on high until the mixture is completely smooth and bright green-flecked, about 45 to 60 seconds.
- 4Taste and adjust with an extra squeeze of lemon if needed for brightness, then pour the puree through a fine-mesh strainer into a clean bowl, pressing to extract all liquid and discard solids.
- 5Chill the strained base in the refrigerator for at least 1 hour until thoroughly cold.
- 6Pour the cold base into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency, usually 20 to 25 minutes.
- 7Transfer the sorbet to a freezer-safe container, press parchment directly on the surface, and freeze for 2 to 3 hours until firm enough to scoop.
- 8If you do not have an ice cream maker, pour the base into a shallow metal pan and freeze, scraping vigorously with a fork every 30 minutes for 3 hours to create a granita-style texture.
- 9Scoop into chilled bowls or glasses, garnish with a fresh basil leaf, and serve immediately so the herbal grape flavor stays vivid and refreshing.
