Ingredients

  • 3 large tart apples
  • 2 cups seedless red and green grapes
  • 2 tbsp fresh lemon juice
  • 1/3 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 tsp ground cinnamon
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 6 tbsp cold unsalted butter
  • 1/3 cup chopped pecans
  • 1/4 tsp flaky sea salt
  • for serving vanilla ice cream

Instructions

  1. 1Preheat the oven to 375°F. Have a 10-inch oven-safe skillet or 2-quart baking dish ready.
  2. 2Core and slice the apples into thin half-moons; leave the skins on for color and texture.
  3. 3Halve the grapes and toss them with the apple slices, lemon juice, granulated sugar, cornstarch, and cinnamon until evenly coated.
  4. 4Tip the fruit mixture into the skillet and spread into an even layer.
  5. 5In a bowl combine oats, flour, brown sugar, and salt.
  6. 6Cut the cold butter into small cubes and work it into the oat mixture with your fingers until clumpy and pebble-sized.
  7. 7Stir in the chopped pecans, then scatter the topping generously over the fruit, leaving a few gaps for steam.
  8. 8Bake 35 to 40 minutes until the fruit is bubbling vigorously at the edges and the topping is deep golden brown.
  9. 9Rest the crisp 10 minutes so the juices thicken into a glossy sauce.
  10. 10Scoop into bowls while still warm, top with a melting scoop of vanilla ice cream, and finish with flaky salt.
