  • 1.5 lb ground beef (80/20)
  • 3 tbsp everything bagel seasoning
  • 1 tsp sesame seeds
  • 1 tsp poppy seeds
  • 1/2 tsp dried minced garlic
  • 1/2 tsp dried minced onion
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 4 sharp cheddar cheese slices
  • 4 everything bagels
  • 2 tbsp unsalted butter
  • 1/4 cup mayonnaise
  • 2 tbsp Dijon mustard
  • 4 leaves leaf lettuce
  • 1 large ripe tomato
  • 1/2 medium red onion
  • 12 dill pickle chips

Instructions

  1. 1Split the everything bagels horizontally and set the cut sides up on a sheet pan. Soften the butter and brush it evenly over the cut faces so they will toast golden without drying out.
  2. 2In a small bowl stir together the everything bagel seasoning with the extra sesame seeds, poppy seeds, dried garlic, and dried onion so the crust stays bold and crunchy.
  3. 3Divide the ground beef into four equal portions. Gently form each into a patty slightly wider than the bagel, pressing a shallow thumb dent in the center to keep them flat while cooking. Season both sides generously with kosher salt and black pepper.
  4. 4Heat a large cast-iron skillet or griddle over medium-high heat until a drop of water sizzles and evaporates instantly. Place the patties in the hot pan without crowding and cook undisturbed for 3 to 4 minutes until a deep brown crust forms on the bottom.
  5. 5Flip the patties and immediately sprinkle a generous pinch of the everything seasoning blend over the cooked side so it adheres to the hot surface. Continue cooking 3 to 4 minutes more for medium.
  6. 6Lay a cheddar slice on each patty during the last minute of cooking. Tent the skillet loosely with foil or a lid so the cheese melts fully into glossy sheets.
  7. 7While the cheese melts, toast the buttered bagel halves cut-side down in a second skillet or under the broiler for 1 to 2 minutes until golden and fragrant. Watch closely so the seeds do not scorch.
  8. 8Stir the mayonnaise and Dijon together into a quick sauce. Spread it on both cut sides of each toasted bagel.
  9. 9Build each burger starting with the bottom bagel, then lettuce, a thick tomato slice, the cheesy seasoned patty, a few red onion rings, and pickle chips. Cap with the top bagel half and press gently so the layers settle.
