  • 2 1/4 tsp active dry yeast
  • 3/4 cup warm milk
  • 1/4 cup granulated sugar

  • 4 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 2 tsp instant espresso powder for cream
  • 1 tsp vanilla extract
  • 2 tbsp cocoa powder for dusting
  • 2 tbsp powdered sugar for dusting

Instructions

  1. 1Proof the yeast in warm milk with a little sugar until bubbly. Beat the eggs, remaining sugar, melted butter, and espresso powder together, then combine with the yeast mixture.
  2. 2Stir in flour and salt to make a soft dough. Knead until smooth and springy, then set in an oiled bowl to rise until doubled in volume and full of air.
  3. 3Deflate the dough gently, roll to half-inch thickness, and cut into rounds. Place on parchment-lined sheets, cover, and let rise again until puffy and ready to fry.
  4. 4While the dough proofs, beat the cold heavy cream with mascarpone, powdered sugar, espresso powder, and vanilla until thick, stable, and richly coffee-flavored. Chill the coffee cream until needed.
  5. 5Bring frying oil to a steady 350°F. Fry the Bismarcks a few at a time, flipping once, until deep golden and hollow-sounding when tapped. Transfer to a rack to drain and cool.
  6. 6Once cool, pierce each Bismarck from the side with a skewer and gently open a pocket inside without tearing the shell. Load the coffee cream into a piping bag.
  7. 7Pipe the espresso cream generously into each fried shell until the Bismarck feels plump and the cream reaches the edges. Wipe clean for a neat finish.
